Mac N' Cheese
This vegan mac n’ cheese is the perfect addition to any family backcountry adventure. Its’ simplicity will ensure your kids will eat it, and adults can always add in some extras to spice it up a bit - maybe some chorizo sausage?!
Ingredients: Elbow Pasta (durum wheat semolina, niacin, folic acid, ferrous sulphate, riboflavin, thiamine, mononitrate), Almond Flour, Nutritional Yeast, Tapioca Starch, Oat Flour, Onion, Garlic, Mustard, Salt, Smoked Paprika, Pepper, Turmeric.
May Contain: Tree Nuts, Soy.
*Note that the extra portion is simply 1.5 that of the single, making it 705 calories.

To Prepare:
Tear the bag open at the top, utilizing the pre-cut notch. Pour approximately 1 cup (small portion) or 1.5 cups (regular portion) of boiling water into the bag. Give the contents of the bag a stir, ensuring you are getting down into the corners. Seal the bag. Let stand for approximately 15 – 20 minutes and then enjoy!
Other Ways to Enjoy:
This is one of our simplest meals - born out of tripping with our youngest adventurers! Many enjoy this meal as it is on backcountry trips, but there are numerous ways you can make it a little bit more exciting! Adding some fresh veggies, such as cherry tomatoes and chopped spinach, would be great ways to liven it up a bit. You could also add some bacon bits or hot dogs to get a bit more protein in there.
